How do you freeze muffins? (without losing their softness)
You make a nice batch of homemade muffins, everyone eats one or two... then there are a few left on the counter. What do we do to avoid waste before they become too dry? We freeze them, of course!
Here's how to freeze your muffins so they stay as moist and delicious as on day one.
Let the muffins cool completely
First of all: patience. If the muffins are still warm, they will give off steam when wrapped.
The result: condensation, then ice crystals that can make the muffins moister or change their texture. The best thing to do is to let them cool completely on a rack before freezing them.
Pack them properly
The number one enemy in the freezer? Air.
To keep them fresh:
Place the muffins in an airtight freezer bag or tightly sealed container.
Remove as much air as possible. (A little homemade tip: slip a straw into the corner of the bag, gently remove the air and then quickly close by removing the straw at the very last second!)
If stacking multiple muffins, add a sheet of parchment paper between the layers.
A little tip: write the date on the bag.
How long do they keep? Well-wrapped homemade muffins will usually keep for up to 3 months in the freezer.
How to thaw them
Method 1 — At room temperature
Leave the muffin on the counter for about 1 to 2 hours.
Method 2 — Directly in the lunch
Place a frozen muffin in the lunch box in the morning. It will be thawed and ready to eat at lunchtime.
Method 3 — A few seconds in the microwave
It only takes about 20 to 30 seconds to get back into a soft muffin. (A few extra seconds even make it look like it's just out of the oven!)
Can you freeze all muffins?
Yes. Wild blueberry muffins, double chocolate, banana-chocolate, cinnamon and raisins... They all freeze very well. Even muffins made with plant-based milk or without eggs usually keep an excellent texture.
