Why Your Muffins Get Dry (And How To Get Fluffy Muffins Every Time)

Getting moist muffins doesn't have to be complicated. Often, a few small details make all the difference. Here are our top tips for tender, moist and successful muffins every time.
Do not overmix the batter
This is probably the most common mistake. When you mix for too long, gluten develops more and muffins can become more compact and drier.
The secret? Mix just enough so that the ingredients are incorporated.
Let the dough rest for a few minutes
At MUFF, we always like to let the dough rest for about 5 minutes before baking.
Why? This short break time allows the dry ingredients to absorb the liquids and helps to achieve a fluffier texture.
Be careful with cooking
Even cooking for a few minutes too long can make a difference. Start checking your muffins a little before the recommended time runs out.
The best test is simple: insert a toothpick in the center. If it comes out clean or with a few crumbs, they're ready.
Use enough fat
Oil plays a big role in the texture. It helps keep muffins tender and moist for longer. This is why many muffin recipes use oil instead of butter.
Add fruit
Fruits naturally provide moisture.
