One of our favorite tricks: make a big batch and then freeze some of it. The muffins will keep for up to 3 months in the freezer when properly wrapped. In the morning, all you have to do is:
slip one into the lunch box
let it thaw at the counter
or to warm it up for a few seconds

Can you add apple pieces?
Yes! While our mixture is filled with dehydrated Quebec apples, you can add some fluffiness by adding about 3/4 to 1 cup of finely diced apples to the batter before baking. Firmer varieties such as Honeycrisp, Gala or Cortland work particularly well because they keep a nice texture when cooked.
Can you add nuts?
Yes. Add about 1/2 cup of chopped walnuts or pecans to add a little crunch that pairs perfectly with the apples.
Can you add more cinnamon?
Absolutely. If you like more comforting and spicy flavors, add 1/2 to 1 teaspoon of ground cinnamon directly to the batter. For an even more indulgent touch, sprinkle a little brown sugar and cinnamon on top before baking.
